He’s worked with Ross Lewis in the Michelin-starred Chapter One in Dublin and Jeremy Lee at The Blue Print Café in London. But it was his love for gastropubs across the UK that inspired his dedication to honest, uncomplicated, good food made with the best local ingredients.
